With over 20years experience as a Pastry Chef, I've experimented with many styles and polished my expertise in a wide range of skills; including plated desserts for fine dining, brasserie and banqueting dishes, handmade petit fours and chocolates, ice creams and sorbets, artisan bread, sugar work, chocolate techniques, and a huge variety of afternoon teas.
I've had the pleasure of working with many talented chefs over the years, and collectively worked hard to maintain or establish the accolades so coveted by each property and it's team. Working in up to 2 Michelin starred, and 5 AA rosette restaurants, also Relais et Chateau 5 star hotels, has given me a wealth of experience and a sense of pride in the luxury service and high quality of food provided each of these outstanding businesses.
I have had the privilege to cater for several senior members of Japanese, European and British Royalty, important state visits, internationally renowned celebrities and high profile events such as the annual Nobel Peace Prize banquet for 3 consecutive years, as well as for corporate functions for the likes of Google and the MTV Music Awards.
As a pastry chef, I have to be incredibly creative, organised, focussed and dedicated to perfection.. No matter the trials, the satisfaction of sending a perfectly calculated, exquisitely detailed, and delicately balanced dish that will be both appreciated for its superior taste and artistic presentation.... Well it's priceless.
